A WEDNESDAY HOWDY

Do you see this?  My grandson Tyler is going to be racing this and of course I will be honest, I am not sure I can watch.  It scares me and makes my heart pound.  His Dad, Ricky also races and the same with him.  I just don't like to see it as I worry something will happen.  Like a big CRASH.  Hopefully all will go ok in this adventure.

Today I am out and about, doing laundry and  fixing a pot of wild rice soup.  I hope your day is a pleasent one and Happy Halloween to all.

HE IS A BIG BOY NOW

  My great Grandson, Landyn had his big first Birthday Party last week.  He is our miralce guy for sure.  He looks so much like his mother did when she was a wee one.  I wish I could have been there but miles between us I could not make it.  Sad when family can't live close and all be together for such joyfull  events.  Seems everyone is here, there, yonder, and everywhere.   I love my lil guy very much.

COTTON FIELDS

Oh my, see all that Cotton.  My daughter, Lori and I took a ride into the country the other day and stopped to pick some cotton.  The fields are so full this time of year.  Soon they will be gathering it and sending it off to be made into lovely items.  They grow peanuts, soy beans and cotton alot around here.

IT'S A MONDAY THANG


Good Morning, I have been MIA.  We had out of town company for a week so busy doing this and that.  Today I need to see what all I can get into, like laundry, sweeping, cooking, crocheting, what else.  It is going to be a nice day here in sunny Florida today.  I sure do miss the colder weather that we had in Tennessee.  I am for sure a Winter time gal.  Love the beautiful snow flakes that fall from the sky.

OH ME, OH MY


Well hello there.  So how are you doing this find Thursday afternoon.  Birds are singing, squirrals are running around, dogs are barking, what else could be any better.  I keep hearing this sound behind me so I turn around and it's only the hubby snoring away.  He says he does not nap during the day.  He HEEEE.
Where is my camera.
The leaves are really falling now.  I did put it on my honey-do--list that it is raking time.   Tomorrow I will go after the pumpkins to decorate the yard and get ready for that witch woman that they says flies around on Halloween Night.  I want the yard to be nice when she flies over.

BEAUTIFUL FALL SUNDAY

. This recipe makes 2 loaves.

CARROT–ZUCCHINI BREAD WITH CREAM CHEESE

  • 1 3/4 cups unbleached flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 2 eggs
  • 1/2 cup canola oil
  • 1/4 cup honey
  • 1 tsp. vanilla
  • 3/4 cup packed brown sugar
  • 3/4 cup shredded carrot
  • 1 cup grated zucchini
  • 1/2 cup chopped walnuts

Preheat oven to 325 degrees. Grease and flour two 8×4″ loaf pans. In medium bowl stir together flour, baking powder, baking soda, salt, cinnamon, and ginger. In large bowl, mix eggs, oil, honey, and vanilla, blending well; then add brown sugar and blend well. Gradually add flour mixture from medium bowl into the egg mixture, mixing well. Stir carrot, zucchini, and walnuts into the batter; mix until well combined. Pour batter into the greased and floured loaf pans. Bake 50-55 minutes, or until toothpick inserted in center comes out clean. Let cool in pans about 15-20 minutes before removing; then completely cool the loaves before adding the frosting.

CREAM CHEESE FROSTING

  • 1/2 cup butter, softened
  • 4 oz. cream cheese, softened
  • 3 cups powdered sugar
  • 1 Tbsp. half & half
  • 1 tsp. vanilla
  • 1/3 cup chopped walnuts for garnish

In medium bowl, blend softened butter and cream cheese; add powdered sugar and mix well. Add in the half & half and vanilla, and blend all ingredients well. Spread frosting liberally over the top of the carrot-zucchini bread and sprinkle with chopped walnuts. Then treat yourself to a slice after all your hard work! :) If you’re not serving the loaves right away, keep refrigerated until ready to serve.

IT'S A FRIDAY HOWDY

Good Morning, I do hope your day will be a nice eventfull one.  I am beginning to get settled after out trip from Tennessee back to Florida.  As they say there is no place like HOME.  The weather is nice so that makes it alot nicer for me as I am a Cold weather gal.  Will miss the snow this year but oh well, can't have it all my Mom use to tell me.  I hope you have a nice day and will post more often now that I am not such a busy bee
